Ingredients:

3 cans Great Northern beans, rinsed and drained (sometimes I use 1 black bean , for color)
2 ½  cups of chopped chicken
1 cup of chopped onion (1 large)
1 ½  cups of chopped red, green, and/or yellow sweet pepper (2 medium)
1 can medium or spicy RO-TEL (and/or fresh chopped jalepeno)
2 cloves garlic, minced
2 teaspoons of ground cumin
½  teaspoon each of salt and pepper
½ teaspoon of dried oregano, crushed
3 ½  cups of chicken broth

OPTIONAL:
Shredded Monterey Jack cheese
Broken tortilla chips
Fresh cilantro
sour cream

Directions:

Saute the onions for 5 minutes. Add garlic.  Add everything else, simmer about 1 hour. Add water if it becomes too thick.  If storing in fridge, the beans will definitely continue to absorb liquid!  SERVE with your favorite toppings!
